Ingredients

  • 4 cups whole Milk
  • 1/4 cup Basamati rice
  • 1 cup Sugar
  • Assorted dry fruits (Cashew nuts and almonds)
  • A few Saffron strands
  • Cardamom powder

Instructions

  • Heat the milk in a pan on medium to high heat.
  • Bring it to boil. Keep on stirring the milk in between.
  • Wash the rice well and soak it in water for 30 minutes.
  • Transfer the rice into a blender pot. Blend it into a smooth paste.
  • You can use water if required. Keep it aside.
  • Once milk comes to a boil add sugar. Stir well.
  • Cook for 5 minutes more. Add rice paste. Mix well.
  • Cook until the rice is completely cooked.
  • Keep it stirring at intervals so that no lumps are formed.
  • After about 15 minutes of cooking, add assorted dry fruits and saffron.
  • Mix well and cook for another 10 minutes.
  • Turn the heat off and garnish with cardamom powder. Mix well.
  • Pour out into serving bowl and chill it for 2 – 3 hours.
  • Serve chilled.
