Ingredients

  • 1 Bringal
  • 1 cup finely chopped Onion
  • 1 tsp Garlic-Green chili paste (8-10 garlic cloves & 4-5 green chillies)
  • Salt to taste
  • 3~4 tsp Roasted peanut powder
  • 1 tbsp Garam masala
  • 1 tbsp Coriander powder
  • 10~12 Curry leaves
  • 1 tsp Cumin seeds
  • 1 tsp Mustard seeds
  • 1/2 tsp Turmeric powder
  • Finely chopped Coriander leaves
  • 2 tbsp Oil

Instructions

  • Wash and dry the Bringle. Make slits in Bringle with the help of a knife. You also can prick it.
  • This helps the roasting the Bringle evenly.
  • Rub a little oil all over the Bringle.
  • This helps in peeling the skin of roasted Bringle easily.
  • Spread foil below the burner on gas and put the Bringle vertical on it.
  • Spreading foil on the gas prevents from getting gas dirty.
  • After roasting the Bringle a little vertically lower down the heat and roast the Bringle horizontally.
  • Keep on rotating Bringle after roasting it for about 2 minutes.
  • When the Bringle cools down, peel the skin completely.
  • Mash the Bringle really good with fork, masher, or knife.
  • Heat up oil in a pan.
  • Add mustard seeds and let then pop up.
  • Add cumin seeds and let them sizzle up.
  • Add curry leaves and onion.
  • Mix well and fry on medium heat for about 5-6 minutes until it gets a nice golden color.
  • When the onion begins to turn light golden add garlic green chili paste, garam masala, coriander powder, and turmeric powder.
  • You can use goda masala or kanda lasun masala instead of garam masala.
  • Fry for about 2-3 minutes.
  • Add mashed Bringle and stir well.
  • Add roasted peanut powder and salt to taste.
  • Mix well and cook for about 4-5 minutes.
  • Turn off the gas and add coriander leaves.
  • Mix well and vangyache bharit is already.
  • It goes fantastic with jawar, bajra or rice bhakari.
