Ingredients
- Oil 3 tsp
- 1 tsp Mustard seeds
- 1 tsp Cumin seeds
- pinch of Hing
- 1 big Onion finely chopped
- 1 tsp Ginger Garlic paste
- 1 1/2 tsp Coriander powder
- 1 tsp Cumin powder
- 1 Tomato chopped
- 1 tsp Red Chilli powder
- 1 Potato peeled and chopped
- 4 to 5 Baingans chopped
- 1 tsp Garam masala
- 2 tsp Tomato Sauce
Instructions
- Peel potatoes and cut into small cubes. Wash and cut baingans into big pieces.
- Heat oil in a kadhai, add mustard seeds, cumin seeds, a pinch of hing, onions, mix and fry till it becomes translucent.
- Add ginger-garlic paste and cook till the raw smell from ginger-garlic goes away.
- Add coriander powder, cumin powder, mix cook for 2 minutes.
- Add tomatoes, mix and cook for 2 mts.
- Add red chili powder, mix and cook till oil separates from the spices.
- Add tomato sauce, mix and cook for a minute.
- Add potatoes, sprinkle some salt, water, mix, cover, and cook for 15 minutes.
- Add baingan, some salt, mix, cover, and cook till it's cooked properly.
- Add some garam masala. Garnish with chopped coriander leaves.
Notes
- Add some water for gravy consistency.
- Once potatoes and baingans are cut, add them in cold water so that they will no discolor.
