Good, very very healthy, tasty, refreshing and nourishing way to have greens in daily meals. Very simple and yet very delicious treat that goes well with some raita, pickle, chutney and papad!

Ingredients

  • 4 cloves of Garlic
  • 1 bunch of fresh Coriander
  • leaves
  • 6 Green Chillies
  • Grated coconut
  • 1 tbsp Oil
  • 1 tsp Cumin seeds
  • 2 Bay leaves
  • 2 tbsp Peanuts
  • 1 tbsp Chana dal
  • 4 dried Red Chillies
  • 1 tbsp Urad dal
  • 1 Onion sliced
  • 1 1/2 cup Basmati Rice
  • 3 cups Water

Instructions

  • Wash and soak basmati rice in enough water for 30 mts.
  • Mix garlic, green chillies, coriander leaves, coconut in a blender and grind to make smooth chutney kind of consistency.
  • Heat oil, add cumin seeds, bay leaf, dried red chillies, peanuts, split chana dal, mix well and cook to peanuts and dal gets light brown color.
  • Add urad dal and cook for 30 seconds.
  • Add sliced onion and saute till onions become soft and translucent.
  • Add coriander chutney, mix and cook for 3 to 4 minutes.
  • Add rice, mix well, add 3 cups of water, salt to taste, cover and cook on high heat for 5 minutes.
  • After 5 minutes cook for 10 minutes for on medium heat and again cook on low heat for another 10 mts.
  • Serve with raita, pickle, chutney and papad!
