Ingredients

  • 1 cup shredded Coconut
  • 2 cups Rice
  • 2 tbsp Ghee
  • 1 tsp Mustard Seeds
  • 1 tsp Cumin seeds
  • pinch of Hing
  • 2 tbsp Raw Peanuts
  • 2 to 3 Dried Red Chili
  • 2 to 3 Green Chili
  • 8 to 10 Curry Leaves
  • 1 tsp Chana Dal
  • 8 to 10 Cashew Nuts
  • Salt for Taste
  • Coriander Leaves as per liike

Instructions

  • Add ghee in the pan and wait till ghee melts down
  • Temper it with mustard seeds, cumin seeds, Hing, raw peanuts, dried red chili, green chili and stir it around.
  • Wait till peanuts starts changing its color. Then add curry leaves, chana dal and cook it for 30~40 secs
  • Add cashew nuts, split urad dal and mix
  • Roast it for 3~4 mins till nuts and lentil gets light golden color
  • Add shredded coconut and mix
  • Add Rice and salt and mix everything together
  • Add coriander leaves, mix and cook it for 3~4 mins
  • Coconut rice is ready to serve.
