Gajar ka halwa is all time favorite Indian sweets which has been  in lots of Indian cinemas as well. Enjoy this simple, easy and quick version of Gajar Halwa using Ricotta cheese. Milk powder or Khoya/Khawa can be used if you don't have ricotta cheese available.
Preparation time : 15 mts
Cooking time : 30 mts
Serves : 3 to 4 people


  • 4 cups shredded Carrot
  • 1 tbsp Ghee
  • 1/4 cup Milk
  • 1 cup Ricotta Cheese
  • 8 to 10 Cashew Nuts
  • 8 to 10 Almonds
  • 2 tbsp Golden Raisins
  • 1 cup Ricotta Cheese
  • 2 cups Sugar
  • 1/4 tsp Cardamom powder

  • First peel the carrots and grate them using grater. Use big wholes on the grater to grate the carrot.
  • Then melt tbsp of ghee in a pan.
  • Add shredded carrot and milk, mix well.
  • Cover and cook for 10 minutes.
  • After 10 minutes, add ricotta cheese, nuts in to carrots and mix well.
  • Cook it for 10 more minutes.
  • After cooking carrots for 10 mts, add sugar, mix.
  • And cook for 10 mts or until carrots mixture thickens up a bit
  • Finally add cardamom powder, mix well.
