Ingredients

  • 2 cups Wheat flour
  • 1 tsp Besan / Chickpea flour
  • 1 tbsp Red chili powder
  • 1 tbsp Coriander powder
  • Cumin seeds-ajwain powder (1/2 tsp Cumin seeds and 1/2 tsp ajwain blended coarse)
  • 1 tsp Sesame seeds
  • 1/2 tsp Turmeric powder
  • Salt to taste
  • 3/4 cup Water
  • Oil for frying

Instructions

  • In a dish, take wheat flour.
  • Add besan, red chili powder, coriander powder, Cumin seeds and ajwain powder, sesame seeds, turmeric powder and salt.
  • Mix the dry spices well with flour.
  • Add a little water at a time and knead the thick dough of it. Don’t add much water at a time.
  • Grease the dough with little oil and transfer the dough into a bowl.
  • Cover and give it a standing time of 30-45 minutes.
  • After about an hour take the dough out and knead once more.
  • Take some dough and roll medium-thick chapatti. Chapati should neither be too thick or too thin.
  • You can make small balls and roll the puris too.
  • Until you roll the puris, heat up oil in a pan for frying.
  • After rolling out the chapatti, make puris with the help of a lid.
  • When puris are ready transfer them into a dish.
  • When the oil is enough hot, lower the heat to low.
  • Drop one puri into the hot oil. After dropping, press it a little with a ladle.
  • When fried well from one side, flip over and fry from another side as well.
  • Remove the puri from hot oil, drain excess oil, and put it on a tissue paper.
  • You can make 24-25 medium size puris from 2 cups wheat flour.
  • Tikhat puri goes well with tea.
  • It has got a shelf life of about 7-8 days. So this can be good traveling food.
