Ingredients

For Spicy Pani:

  • 1 cup Coriander leaves
  • 15~20 mint leaves
  • Salty boondi
  • 1/2 tsp Chat masala
  • 1 tsp Roasted Cumin powder
  • 1/2 tsp Black salt
  • Ginger
  • 1~2 Garlic cloves
  • 1 green chili

For Sweet Pani:

  • 1/2 cup Tamarind
  • 1 cup Gudh / Jaggery
  • 1/2 tsp Chat masala
  • 1/2 tsp Red chili powder
  • 1/2 tsp Roasted Cumin powder
  • 1/2 tsp Black salt

Instructions

For Spicy Pani:

  • Wash coriander leaves and add these in blender pot.
  • Add mint leaves, green chili, ginger and garlic.
  • Close the lid and blend it into fine paste.
  • If the mixture is not properly blended then take the mixture at the centre with the help of knife and add a little water.
  • Blend it into fine paste.
  • Transfer the green chutney into a bowl.
  • Add water and mix well.
  • Add chat masala, roasted cumin powder and black salt.
  • Mix well and add salted boondi.
  • Spicy pani is already.

For Sweet Pani:

  • Heat up a pan on medium heat.
  • Add a little more than 1/2 cup water, tamarind, and gudh in the pan.
  • Cook on medium heat 7-8 minutes.
  • When gudh dissolves completely cook for 2 more minutes.
  • Turn off the gas and mash the mixture well with a potato masher or backside of a spoon.
  • Take a bowl and put a strainer on it.
  • Transfer the mixture into the strainer and strain it.
  • Again transfer the mixture into the pan.
  • Add a little water and heat it up just for about a minute or two.
  • Mash it and again transfer the mixture into the strainer and strain it.
  • Repeat this process until all the flavor from tamarind is extracted for about 3-4 times.
  • Add red chili powder, chat masala, roasted cumin powder, and black salt in strained tamarind pulp.
  • Mix well and sweet pani is already.
  • If you want this water sweeter then you can add powdered sugar according to your taste.

Notes

  • You can add the green chutney in cubes of the ice tray and freeze it. Transfer the ice cubes in a zip lock bag or a container and store these in the freeze. Whenever you want to make spicy pani just add these cubes into cool water and spicy water is ready.
  • You can cook tamarind, gudh, and water together in a pressure cooker until 2 whistles on medium heat.
  • Chat masala and black salt contain salt so no need to use regular salt.
  • You can use the leftover tamarind to clean the copper and brass utensils at home
