Ingredients

For Manchurian Balls:

  • 1 1/2 cup finely shredded Cabbage
  • Grated Carrot
  • Finely diced Green pepper
  • Finely chopped Coriander leaves
  • Finely chopped Garlic
  • Diced Ginger
  • Black pepper powder
  • Chili flakes
  • 2 tbsp Maida / All purpose flour
  • 1 tbsp Cornflour
  • Salt to taste
  • 1/4 cup Boiled rice
  • Oil for frying

For Sauce or Gravy:

  • 1 tbsp oil
  • Finely chopped Garlic
  • Finely shredded Ginger
  • Sliced Onion
  • 3~4 Green chilies
  • Shredded Cabbage
  • 1 tbsp Cornflour
  • Water
  • Black pepper powder
  • Soya sauce
  • Tomato sauce
  • Chili sauce
  • Vinegar
  • Water

Instructions

For Manchurian Balls:

  • In a bowl, take shredded cabbage.
  • Add grated carrot, green pepper, and coriander leaves. You can add veggies of your choice like green peas, spring onion, etc.
  • Add garlic, ginger, black pepper powder, and chili flakes. You can add chili sauce or soya sauce.
  • Mix everything well together. Add maida, corn flour and salt. Mix well again.
  • Mash boiled rice well and add it to the mixture. Boiled rice gives nice crunch to the Manchurian.
  • Knead everything well into dough. Make small balls out of the dough.
  • Heat up oil in a pan. When oil is enough drop the ball into it.
  • Fry until it gets deep golden color from all the sides.
  • Keep rotating the ball at intervals to get even color from all sides.
  • When the balls are fried well, remove them from the oil, drain excess oil and put them on a tissue paper.

For Sauce or Gravy:

  • Heat oil in a pan. Add garlic, ginger. Saute it for just 15-20 seconds.
  • Add onion and saute it for just a minute.
  • In a bowl take cornflour. Add in some water to make a paste. Mix well and cornflour paste is ready.
  • Add whole green chilies and shredded cabbage. Saute it for just about a minute.
  • Add black pepper powder, soya sauce, tomato sauce, and chili sauce. Mix well.
  • Add vinegar. You can use lime juice instead of vinegar.
  • Add water and salt. Soya sauce and chili sauce has salt in it. So add a little salt.
  • Mix well and add cornflour paste. 1-2 tbsp paste is enough or the gravy will thicken up much more.
  • Stir well and cook for 2 minutes.
  • When gravy thickens up add Manchurian balls to it.
  • Coat the Manchurian ball with the gravy and cook this for just a minute.
  • Turn off the gas. Manchurian is ready. Garnish with some spring onion.
