Batata wafers are crunchy, crispy and salty. These are very easy to prepare. This can be a good option for fasting. These are all time favourite snack. Let’s learn to make batata wafers.

Ingredients
- cups Water
- A piece of Alum / Turti
- 1/2 kg Potato
- 2 tsp Salt
Instructions
- Take water in a pan and add alum. Stir it and keep aside.
- Take potatoes and wash them really good under running water.
- Peel them and make slices with slicer. Do not make too thin slices.
- Make little thick and even slices. Slice directly into alum water.
- Drain the water and soak in fresh water. Add lots of water so that potatoes should float in water.
- Add a piece of alum. Cover and rest it over night.
- If you don’t have much time and want to make wafers immediately, then rest it for at least an hour.
- Transfer the slices into a strainer and drain all water.
- Boil water in pan and add salt. Stir it. Add potato slices into boiling water.
- Cook until its colour changes from white to yellowish for about 7-8 minutes.
- Spread a cotton cloth. Take a strainer and put a pot under it.
- Transfer cooked slices into strainer and let all the water strain for about 5 minutes.
- Spread all the wafers on cotton cloth and sundry under hot sun.
- Dry for 4-5 hours, flip over and dry from other side. It takes 1-1 1/2 day for wafer to dry completely.
- You can store dries wafers in air tight container or carry bag when these are completely dried.
- These can remain good for 1 1/2 – 2 years. You can fry them whenever required.
