Ingredients

  • 1 tbsp Oil
  • 1 tbsp Coriander seeds
  • 1 tbsp Cumin seeds
  • 1 tbsp Stone flower
  • 10 Cloves
  • 2 Cinnamon sticks
  • 1 tbsp Fennel seeds
  • 3 Bay leaves
  • 1 tbsp White sesame seeds
  • 3 tsp Oil
  • 1/2 cup Peanuts
  • 1/4 cup Sliced coconut
  • 2 tbsp Roasted chana dal
  • A pinch of Hing / Asafetida
  • 1/2 tsp Turmeric powder
  • 1 tbsp Red chili powder
  • 1/2 cup Dried Onion
  • 3 cups Poha / Puffed rice
  • Salt to taste
  • 1/2 tsp Chat masala
  • A pinch of Black salt
  • 1/2 tsp Powdered sugar

Instructions

  • Heat up oil in a pan.
  • Add coriander seeds, cumin seeds, stone flower, fennel seeds, peppercorns, cloves, cinnamon sticks, bay leaves and sesame seeds.
  • Fry on medium heat until these release aroma.
  • Turn off the gas and transfer the spices into a blender pot.
  • Blend the spices into powder. Fresh masala for Nashik chivda is already.
  • Heat up oil in a pan.
  • Add peanuts and fry them until these turn little red.
  • Add coconut slices and roasted chana dal.
  • Fry until this change the color.
  • When coconut turns nice and even reddish, turn off the gas.
  • Add hing, turmeric powder, red chili powder and dry onion slices.
  • Turn on the gas and fry for just about a minute.
  • After a minute or so, turn off the gas and add fresh blended masala. Mix well.
  • Sieve bhajake pohe well through a sieve after buying from market.
  • Add bhajake pohe and mix well.
  • Add salt to taste, chat masala, black salt and powdered sugar.
  • Mix everything well together. Nashik chivda is already.

Notes

  • All the dry spices are to be fried one by one. But as we are making chivda in less quantity, we are frying the spices together.
  • You can fry peanuts, coconut slices and roasted chana dal separately.
  • If you add sry spices when gas is on, there are chances that these spices may get over roasted.
  • While making Nashik chivda, kokum petals are fried in oil and blended into powder. This powder is added to chivda to give a nice tangy taste. But I have added chat masala and black salt instead of kokum powder.
