Ingredients
- 4 cup Full fat / Whole Milk
- 1/c cup Sugar
- Assorted Dry Fruits - Cashew nuts, Almonds, Pistachio
- Saffron
- 1 1/2 Cup Paneer
- 1 tsp Cardamom powder
Instructions
- Take full cream milk in a heavy bottom pan. Heat the milk on high heat.Â
- Bring this milk to boil. Make sure that the milk fat doesn’t stick to the bottom.Â
- Stir at the intervals to avoid overflowing of the milk.Â
- To avoid overflowing you can put wooden spatula in the milk. It will start boiling within 5 minutes.Â
- Once it starts boiling, lower the heat to medium and allow the milk to simmer for 10-15 minutes. No need to reduce the milk a lot.Â
- After 10 minutes, add sugar and assorted nuts. Add saffron strands. Cook  for 5-10 minutes.Â
- Add scrambled or grated paneer. Add cardamom powder. Let it simmer for 5 minutes.Â
- Now turn off the gas. Cool the kheer in freeze for 2-3 hours.Â
- Tastes best when served chilled. Also can be served hot. Goes perfectly well with puri's
