This is a very easy and quick dessert recipe. Sabudana kheer is generally made during fast like navaratri. We prepare lot many fasting recipes from sabudana like sabudana khichadi, sabudana vade, sabudana thalipeeth, appe etc. Today let’s make a sweet dish from sabudana – sabudana kheer.

Ingredients

  • 1/2 liter full cream Milk
  • 1 cup soaked Sabudana / Sago seeds
  • A few Saffron strands
  • Assorted chopped dry fruits (Almonds, Pistachios, Cashew nuts)
  • 1/4 cup Sugar
  • Cardamom powder

Instructions

  • In a pan heat up the milk. Bring it to boil.
  • Take sabudana in a pot. Rinse it well 4-5 times under running water.
  • Soak the sabudana in enough water for 1 hour. Drain excess water cover and let it soak overnight.
  • When milk is enough hot add soaked sabudana and mix well.
  • Cook for 8-10 minutes until the saubdana swells up and turns translucent.
  • Add saffron and mix well. Add dry fruits. Mix well again.
  • As you cook the sabudana in milk, sabudana loses its starch and the kheer turns thick and creamy.
  • Add sugar and mix well. Cook for another 5 minutes.
  • Turn off the heat. Add cardamom powder and stir well.
  • You can serve it hot or chilled too.
  • Refrigerate the kheer for 4-5 hours. It will turn into pudding. Serve chilled.
